The Shimeji should always be cooked, it is not a good mushroom to serve raw. When raw this mushroom has a somewhat bitter taste; the bittereness disappears completely upon cooking. The cooked mushroom has a pleasant, firm, slightly crunchy texture and a delicious slightly nutty flavor. Cooking also makes this mushroom easier to digest. In stir-fried foods, as well as with wild game or seafood it is a good mushroom. Also it can be used in soups, stews and in sauces. When cooked alone, Shimeji mushrooms can be sautéed as a whole, including the stem or stalk (only the very end cut off), using a higher temperature or they can be slow roasted on a low temperature with a small amount of butter or cooking oil. Shimeji is used in soups, nabe and takikomi gohan.

| Fresh Black Summer Truffles |
The Black Summer Truffle (Tuber aestivum/unicinatum) thrives in northern Italy, central Europe and the UK but also grows in Turkey and North Africa. It is highly valued for its culinary uses. Summer truffles do not have as strong an aroma or taste as winter truffles do. They are mainly harvested from June to November . These truffles grow in symbiosis with trees such as oaks, hazels and beech. Their shape is generally round, up to 4 cm diameter
This truffle had a mouthwatering sweetness that some have described as chocolaty. Do not cook it, shave it onto your dish after cooking. Right before serving the dish.
White or black paper-thin truffle slices may be inserted into meats, under the skins of roasted fowl, in foie gras preparations, in pâtés, or in stuffings. Some speciality cheeses contain truffles as well.
The flavour of black truffles is far less pungent and more refined than that of white truffles. It is reminiscent of fresh earth and mushrooms, and when fresh, their scent fills a room almost instantly. In 2006, designer Tom Ford released a perfume that lists black truffle as its first note.
While in the past chefs used to peel truffles, in modern times most restaurants brush the truffle carefully and shave it or dice it with the skin on so as to use most of this expensive ingredient. A few restaurants, such as Philippe Rochat in Switzerland, still stamp out circular discs of truffle flesh and use the skins for sauces. |

The fresh lobster mushroom gets it’s name from the appearance and scent. The inside is cream colored and the outside is lobster red. It has a firm crunchy texture and a mild nutty flavor. It is good in stir fry, soups and gravies.

Wild Maitake has a rich woodsy taste, crisp texture, and an excellent aroma. Maitake are also known as Hen of the Woods, Dancing Mushroom, Grifola frondosa and sheepshead. This is a very popular mushroom. Sauté them in olive oil and a little butter, good in stew, spaghetti sauce, and in stir fry.

| Fresh Porcini |
Domestic Boletes Edulis Mushrooms, they grow in the wild in the midwest. Not to be mistaken for imported European Porcini, these have a lighter and more mild flavor and aroma. They are known in most countries, and each has a different name for them. This is a great mushroom. It looks like baked bread on the cap. We must slice them in half to be assured that they are pest free. This is a perishable item and it must be refrigerated upon arrival. We suggest putting them into a strainer in the product compartment in your refrigerator. Do not store in plastic, they need air circulation. We carry frozen european porcini and frozen domestic porcini. The porcini is also known as boletus edulis, *Ontto txuri or "the blond", hřib pravy, cep, vargánya, vrganj, borowik szlachetny, baravykas, belyj grib "white mushroom" or borovik, dubák or hríb smrekový, jurček or jesenski goban, hrib or mânătarcă, manatarka, herkkutatti or "delicious bolete", harilik kivipuravik or "common bolete", Karljohan or stensopp, steinsopp, Karl Johan or spiselig rørhat, eekhoorntjesbrood, vrganj, Steinpilz. It is also known as khubz el a'a or "crow's bread".* The flavor of the porcini is excellent, and most people consider it superior in flavor and in texture. It is described as nutty and slightly meaty, with a smooth, creamy texture. Porcini are eaten and enjoyed sautéed with butter, barbequed, ground into pasta, in risotto, in soups, and in many other dishes. If you have never tasted a Porcini, now is a great time to start.

This fresh wasabi is grown in the U.S.A. and our chefs love it.
(Japanese: わさび,ワサビ , 山葵; Wasabia japonica, Cochlearia wasabi, or Eutrema japonica) is a member of the Brassicaceae family, which includes cabbages, horseradish and mustard. Known as "Japanese horseradish", its root is used as a spice and has an extremely strong flavour. Its hotness is more akin to that of a hot mustard than the capsaicin in a chili pepper, producing vapors that stimulate the nasal passages more than the tongue. The plant grows naturally along stream beds in mountain river valleys in Japan. There are also other species used, such as W. koreana, and W. tetsuigi. The two main cultivars in the marketplace are W. japonica cv. 'Daruma' and cv. 'Mazuma', but there are many others.
Wasabi is often served with sushi or sashimi, usually accompanied with soy sauce. The two are sometimes mixed to form a single dipping sauce known as Wasabi-joyu. Legumes(or peas) may be roasted or fried, then coated with a wasabi-like mixture; that can be eaten as a snack.
Wasabi is often grated with a metal oroshigane, but some prefer to use a more traditional tool made of dried sharkskin (鮫皮) with fine skin on one side and coarse skin on the other. A hand-made grater with irregular teeth can also be used. If a shark-skin grater is unavailable, ceramic is usually preferred.

Morels that you are ordering are gray morels
Naturals have a meaty earthy flavor, they are thick.
The grey morels are close in flavor to the blondes. They have a thick, meaty, almost sweet flavor with a bit of a smoky flavor. They grow in areas that have been burned. These morel mushrooms are great in many dishes and alone. They range between 1-4 inches and are excellent in a great variety of dishes. Try these fresh morels and find out what you've been missing! The different types of morels vary through the season, they are known as morchella elata, grey morels, blonde and black morels, fire morels, morelles, sponge mushroom and pinecone mushroom. These are not morchella esculenta or morchella deliciousa. Please be aware, as the weather gets warmer, the morels will be dry, but when you rinse them before you use them, they will regain their weight. Mushrooms consist of alot of water, so they do dry out some.
