Dried Hedgehogs Mushrooms Wild USA

This was my first time trying hedgehog mushrooms. Initially, mu husband(who loves mushrooms) wasn't a fan, he felt the taste was too "earthy". (He likes shitaake and chantrelle the most, for comparison. My favorite are porcini and maitaake.) But then I figured out how to cook with the hedgehogs. I mixed them with other mushrooms in two recipes that were a total hit - a leek, cream, and wild mushroom bake (a traditional Russian dish), and a mixed mushroom gravy with a soy sauce base. They were both amazing with hedgehogs. The hedgehogs keep their texture as they cook, I discovered. They have a nice, delicate crunch - not a hard crunch like a Chinese wood ear-type mushroom. Earthy, but tasty mushrooms with texture.
