Here at Oregon Mushrooms, we have a wide range of different varieties available for you to try. If you're new to the world of fresh mushrooms and aren't sure what to try, here are a few suggestions from us.


Lobster mushrooms are available fresh from late in July until October. The outer shell of these mushrooms are red (giving this mushroom its unusual name) while the inside is cream-colored. Some people believe they have a slight seafood aroma or flavor. They are mild with nutty overtones and an almost crunchy texture, making them wonderful for soups and stir fry.

Available fresh between September and December, the matsutake mushroom is prized by the Japanese people and is an excellent addition to authentic Japanese cooking. In Japanese culture, this mushroom is believed to bring happiness and fortune by increasing fertility. The flesh is firm and white, while the flavor is spicy with an aroma of pine and cinnamon.

There are several varieties of morel mushrooms available between March and July. Morels are known for their complex flavor that is a combination of smoky, nutty, and meaty. This unique taste is well-suited to a variety of dishes and even works great alone. Morels range in size from one inch to four inches.

Porcini mushrooms that are grown domestically have a milder aroma and flavor than their imported counterparts. With a cap that strongly resembles baked bread, this is a mushroom that is popular in a large number of countries, each calling it by a different name. Looking for porcini powder?
