Known as Burgundy Truffles, these truffles from the South of Italy are similar to Winter Black Truffles in appearance. They are, however, lighter, more delicate in flavor and have a wonderfully slightly nutty frangrance. Because they are lighter, we recommend not cooking these truffles. Instead use them to finish butter sauces for meats or shave them over pasta, eggs, or mashed potatoes. In season from April to September.
